
Gum arabic comes from the Acacia tree and is quite multifunctional as an emulsifier, film-former, texturizer and low-viscosity water binder and bulking agent. It is used for flavor encapsulation, in confectionery like gum drops, caramel and toffee.
Due to its Nutraceutical characteristics it has a high solubility, low viscosity and high soluble dietary fiber content.Gum arabic also finds use in meal replacers, nutritional beverages and weight-loss products.
Gum arabic is not chemically modified and qualifies for "natural" or "no artificial additive" labelling.
