Valiren 50 XTL is an economical, highly effective non-GMO milk clotting enzyme that can be used to replace animal extracted or GMO enzymes.
The purification treatment used to render the rennet thermo labile, eliminates some unwanted protease side activities that could be the source for eg. bitter taste and enhancing taste and flavour.
Due to rennet’s thermal labile nature, extra care should be taken when storing rennet; therefore it should be stored in sealed containers under refrigerated (4˚C to 8˚C) to minimize the loss of activity.
